I'm looking at some 20x9.5's (rear wheels), and I'm not too sure what size tire to run.... I'm thinking about a 265/35/20, but I'm not too sure if it will not be wide enough for the wheel.

The 9.5" wheel is 10.5" wide with the mounting lips on each side. The 265's tread width is about 10.4" so it's a close match. It should look fine. You can get a little wider tire if you want to try to protect the lips of the rims a little better, though.

I did some more searching and found some 275/35/20's. It's not much bigger but the section is about a half inch wider. Probably going to get some Nitto 555's since they are the cheapest and will probable dryrot befor the car ever moves...LOL
